Most restaurant owners will most likely utilize a gas stove rather than an electric stove, just because of the convenience. Gas puts off a much moister heat than an electric stove does, and there is less chance of a small child getting burned. An electric burner will remain very hot after it is turned off, whereas the gas flame immediately goes out and cools off. A downfall to gas cooking is that gas puts off carbon dioxide and if you have a leak, you could be breathing in the fumes, which could be a potential dangerous health threat.

There are usually more options that come with an electric range than with gas. Electric ranges usually have an exhaust fan and sometimes are more functional because they might have a top and bottom grill that will heat and broil much better than a gas stove.
