WHAT SIZE BAKING PANS DO YOU NEED?
 
    Baking pans come in many shapes and sizes and it's easy to get carried away
when shopping (or Bridal Shower registering) but most beginners find it simpler
to start with a few basic pans and collect others as needed.
    The number one essential pan is 9"x13"x2".  This is used for a cake-mix, large
quantities of brownies and often to roast meats.  Next an 8" or 9" square pan will
come in handy for  thicker brownies, apple crisp or other rich desserts.  A
10"x15"x1" pan is ideal for sheet cakes, rolled cakes and toasting nuts.  Pans to
add as your culinary repetoire expands are 7"x11"x2" for roasting vegetables or
smaller meats  and 9" round (usually these come in pairs) for making layer cakes.
A 10" round with a removable bottom will be useful when you attempt a cheesecake.
