You combine two tbsp olive oil, two cloves fresh garlic, peeled and crushed, 1/4 cup of fresh chopped basil, 1/4 cup fresh chopped oregano, 1/4 tsp fresh ground pepper and 1/2 tsp salt.

To these spices, add 1/2 cup chopped onions and 1/2 of a green pepper cut into strips. To this mixture, add 3/4 cup washed and sliced firm, ripe tomatoes. In a medium sized baking dish, add the vegetables starting with a layer of tomatoes followed by the green peppers and onions. Top off with remaining tomatoes. Next, pour the olive oil mixture over the vegetables and lightly toss. Cover with one cup low fat mozzarella cheese. Bake in a 350 degree oven until the cheese is melted.
