Here's a refreshing alternative to Blueberry Muffins
- 3/4 cup shredded, unsweetened Coconut
- 2 cups all-purpose Flour
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1 cup hulled Strawberries
- 1 stick unsalted Butter
- 1/2 cup granulated Sugar
- 1/2 cup packed Brown Sugar
- 2 Eggs, lightly beaten
- 1 tsp Vanilla extract
Preheat oven to 350 degrees. Spray muffin pan with non=stick spray or line with
muffin papers. Spread Coconut on baking sheet and toast until golden brown,
8 to 10 minutes.
In large bowl, sift together Flour, Baking Soda and Salt.
In medium bowl, mash Strawberries with fork. Do not puree.
In medium saucepan, over medium heat, melt Butter, blend in Granulated Sugar and
Brown Sugar. Remove from heat and stir in Strawberries, eggs and Vanilla. Stir
until smooth. Stir in Flour mixture. Fold in all but 2 Tbsps toasted Coconut.
Fill muffun cups to the top. Sprinkle remaining Coconut over muffins. Bake until
golden brown, 25 to 30 minutes. Remove muffins to rack to cool.
Makes 12 Muffins.
