1 1/2 pounds Ground Beef

1 cup chopped Onion

1 tsp minced fresh Garlic (or to taste)

1 15oz can diced Tomatoes, undrained

1/2 cup sliced Black Olives'1 Tbsp Chili Powder

1 tsp Salt

1/2 tsp ground Cumin
In large skillet, cook1 and 1/2 pounds of Ground Beef, 1 cup of chopped Onion and one teaspoon (or more, to taste) minced Garlic over medium -high heat until ground beef
is browned. Drain off fat. Stir in one 15 ounce can of diced Tomatoes, one half cup of sliced, pitted black Olives, one tablespoon of Chili Powder, one teaspoon of Salt and one half teaspoon of Cumin. Bring to boiling. Turn heat to medium-low. Cook 5 to 10 minutes, stirring often. This can be prepared up to three days ahead and refrigerated. Re-heat over medium-low heat. Or you can prepare and cook the meat mixture and put it in a freezer bag and freeze up to two months. defrost completely in your refrigerator and reheat over medium-low heat. Serve over corn chips with melted cheese on top or over packaged salad mix with salsa.
Serve over corn chips, with melted cheese on top.
Serves 6.
This is a good simple supper for a relaxing day. Similar to chili, but without beans, you
might also want to put out some sour cream as an optional topping.
