Cheesy Biscuits
Preheat oven to 375 degrees. Coat a baking sheet with non-stick cooking spray.
In a medium bowl, combine two cups of Self-rising Flour (do not use all-purpose Flour)
and one teaspoon of Baking Powder. Using a pastry blender or two knives, cut into Flour
mixture one quarter cup of cold Butter until mixture resembles corn meal. Add three quarters
of a cup of shredded Cheddar cheese and toss to coat Cheese with Flour. Stir in one cup of
Buttermilk until a soft dough forms.
Transfer dough to a Floured surface. Pat dough into a circle, one half inch thick (no rolling
pin needed). Use a two and one half inch biscuit cutter to cut out biscuits.
Place the biscuits on the prepared baking sheet. Brush tops of biscuits with two table-
spoons of melted butter. Bake biscuits for eight to twelve minutes or until golden brown.
This recipe makes one dozen biscuits. They can be made ahead of time and after baking,
cool completely and place biscuits in a freezer bag and freeze them up to two months. You
can take out a few biscuits at a time and defrost and warm them in a microwave oven.
Self-rising Flour contains Baking Powder, so why add more Baking Powder? Because it gives the dough added strength to rise with the heavy Cheesein it and gives these biscuits a
light texture.
These biscuits go very well with hearty soups or use them to make Ham or Turkey sandwiches with mayonaise and/or mustard.
