Whether to use gas or electric for cooking is a matter of the preference of the user. One pro for gas stoves might be that, if you live in a remote area where power is not available or unreliable, a gas stove may be more reliable. At least when the power goes off, you can cook.
Some die-hard electricity fans swear by the electric stove. If they have never used a gas stove, they have no way to compare the two. However, those who have used both have their own opinions. Electric owners like the dependability of the even heat and the convenience of a slower heating time. Being able to adjust the heat as the pan heats is desirable to them. They have learned to watch the product and when it begins to bubble, they know when to turn down the heat, since it will keep the temperature even at this point. Since the heat lingers, they have learned to just move the pan off the unit. Many who like the griddle in the middle of the stove top like the even heat there also. They wouldn't trade their electric stove for gas.
Gas stove lovers swear by their gas stoves. They like the instant heat and when they want to turn it off, it is gone. Gas heat can be easily adjusted for even heat and it can be raised quickly without having to wait for the heat to rise. Ask any restaurant which service they prefer - surely almost all use gas. They don't have time to wait for a stove top to heat with electricity. They wouldn't trade their gas stoves for electricity.
